Homemade Nut & Seed Granola

A not-too-sweet nutty granola recipe with pumpkin and chia seeds without a sultana in sight.

 350 g Oats
 75 g Mixed nuts - broken or roughly chopped, to your liking!
 Pinch sea salt flakes - I use Cornish Sea Salt
 50 g Pumpkin seeds
 2 tbsp Chia seeds
 100 ml Rapeseed oil
 100 ml Runny honey
 Cinnamon - a good pinch

Preheat the oven to 160°c.

Weigh out and combine all the ingredients into a large bowl. Give it a good mix so that the oil and honey distribute evenly throughout the mixture.

Line a large baking tray with non-stick baking paper or greaseproof paper.

Spread the mixture out evenly over the baking sheet.

Bake for 20 minutes, approx, turning and stirring the mixture over once after 10 minutes to help even cooking.

After 20 minutes, turn the oven off and crack open the door. Then leave the mixture to cool in the oven.

Once it's cool, break up any large stuck-together pieces, and put it into an airtight container or jar to keep it fresh.

Serve with milk or yoghurt, topped with any fruit of your choice (or grab it by the handful from the jar)
