Black bean noodle and broccoli salad with sesame, soy and chilli dressing
I’ve made this salad a few times after the black bean spaghetti caught my eye in the aisle of Aldi. It makes a great packed lunch meal and tastes better if it’s not fridge-cold. If I had my way, I’d add sliced spring onions, but the kids aren’t fans of those, so I’ve left them out.
Go nuts, make the dressing to your taste. Add more chilli, soy or garlic until it’s just right for you. In fact, chopped peanuts might also make a tasty addition. I’ll try that next time and report back.
Here’s the recipe for my lunch bowl black bean noodle and broccoli salad with sesame, soy and chilli dressing.
This simple black bean noodle salad is a make-ahead lunch that's ready when you are.
Cook the black bean noodles according to the packet instructions.
I've used Aldi Black Bean Spaghetti, a 200g pack to serve four. This needed about 5 minutes in boiling water.
Lightly cook the broccoli. You still want it to have a bit of bite to it. I've thrown mine in with the noodles.
Once cooked, refresh the noodles and broccoli in cold water. You'll need to run the water over them for a while as you want to cool them down quickly to prevent them overcooking and the broccoli losing its colour.
Mix together the sesame oil, soy sauce, garlic and sweet chilli to make the dressing.
Combine the noodles, broccoli, sugar snaps, red peppers and dressing in a large bowl. You'll need enough space to mix it all around to coat everything in the dressing.
