I make no apologies for today’s #WFHlunch

I’m not even remotely sorry about the few hash browns that we had on the side, either.

I’m not usually a fan of the Golden Arches, but breakfast is different. What’s not to like about toasted muffins filled with breakfast favourites, the pancakes, oh, and the hash browns.

So it’s nice to recreate that at home once in a while, not just for breakfast.

It’s a crowdpleaser, a family favourite and as it was Friday, why not make it fakeaway day.

We all know what’s in them — sausage or bacon, egg, cheese, sandwiched between two halves of buttered toasted English muffin.

I went for poached eggs as that was the nearest I could get to the usual shape.

I’ve tried frying them in crumpet rings before, so they’re perfectly round, but they just stick and it’s not worth the hassle. So I bought a 4-egg microwave egg poacher. Ordinarily, I’d poach eggs in a pan of boiling water with a dash of vinegar, but it does help to have them in a uniform shape and set through to go in the muffins, so I’ll condone it on this occasion! (I’m not convinced the effort of washing up the contraption is worth it though)
