This simple black bean noodle salad is a make-ahead lunch that's ready when you are.

 1 Black bean spaghetti
 1 Head of broccoli, break into florets
 1 Red pepper, finely sliced or diced
 Some sugar snaps
 1 Clove of garlic, finely chopped or crushed
 2 tsp Soy sauce
 1 tbsp Sesame oil
 2 tsp Sweet chilli sauce
 Optional - finely sliced spring onions

Cook the black bean noodles according to the packet instructions.
I've used Aldi Black Bean Spaghetti, a 200g pack to serve four. This needed about 5 minutes in boiling water.

Lightly cook the broccoli. You still want it to have a bit of bite to it. I've thrown mine in with the noodles.

Once cooked, refresh the noodles and broccoli in cold water. You'll need to run the water over them for a while as you want to cool them down quickly to prevent them overcooking and the broccoli losing its colour.

Mix together the sesame oil, soy sauce, garlic and sweet chilli to make the dressing.

Combine the noodles, broccoli, sugar snaps, red peppers and dressing in a large bowl. You'll need enough space to mix it all around to coat everything in the dressing.
